Catholic Youth Camp is a traditional, residential summer camp on Big Sandy Lake that seeks a talented, experienced head chef to sustain its decades-old reputation for superior food. The head chef is responsible for overseeing execution of food service for 110-120 campers and 30 staff during 11 weeks of camp, June 10 “ August 18, 2019.

The head chef is a critical and integral part of camp's leadership. They work closely with the Director and other members of camp's senior staff. Meals are typically served buffet style.

Duties and Responsibilities

Manage daily operation of camps food and dining service.

Supervise and provide operational leadership for the kitchen team, including kitchen support staff of 3.

Provide training in the safe and proper use of equipment, safe food handling, and cleaning routines.

Schedule the kitchen crew to ensure adequate staffing for meals and clean-up and at least one day off each week for each person.

Plan creative and nutritious daily menus. Provide special menus for several special events during the summer.

Oversee the inventory and ordering of food, equipment, and supplies and arrange for the routine maintenance, sanitation, and upkeep of the camp kitchen and dining hall, its equipment, and facilities.

Manage annual food budget.

Cook and serve three meals a day, six days per week.

Create a routine for cleaning, sanitizing, and organizing in the kitchen and dining hall; oversee the crew in carrying out required tasks

Coordinate with the director regarding food budget, as well as any concerns and equipment needs

Stock and maintain the staff refrigerator with a variety of snack and dessert foods and leftovers; monitor the fridge for stock rotation

Accommodate special dietary needs for campers and staff with food allergies or intolerances; coordinate this effort as needed with the campers family, the director, and the camp nurse.

Qualifications

Strong sense of initiative; ability to work closely with others toward a common goal.

Strong problem-solving skills, especially in the context of group dynamics, and interpersonal relations.

Strong work ethic and commitment to the values espoused by Catholic Youth Camp.

Successful relevant experience working in a related field “ restaurant, food service, cafeteria, etc.

Proven experience in food service: ordering, inventory, budgeting, food preparation, family-style serving, buffet serving, cleaning, and institutional kitchen equipment.

Proven experience providing quality alternative meal options that accommodate allergies and intolerances including gluten, nuts, dairy, etc.

ServSafe food safety certification or recognized equivalent.

Able to lift up to 50 lbs. and work on your feet long hours.
