Overview: The Cook is responsible for assisting with the daily operations of the kitchen, as directed by the Kitchen Manager (KM) and Assistant Kitchen Manager (AKM). The cook is expected to comply with all health and safety regulations, follow proper food handling procedures, and generally maintain a clean and organized kitchen.
The cook, under the guidance of the KM and AKM, is expected to read and follow all recipes correctly and in a reasonable timeframe. The cook is expected to properly prepare, with minimal errors, all menu items as ordered. cooks will possess a working knowledge of all stations in the kitchen, work collaboratively with other kitchen staff, ask for clarification when questions arise, and generally maintain high standards.
The cook is expected to arrive promptly for all scheduled shifts; if unable to arrive for scheduled shifts, a reasonable amount of notice should be given to the KM. The cook will be allowed adequate time for breaks and meals, as set forth by local labor guidelines.
Essential Duties and Requirements
Opening and closing the kitchen, based on schedule
Proper rotation of raw product and prepped items
Checking daily for the quality and freshness of all ingredients
Monitoring station inventory levels; making adjustments as needed
Daily cleaning and upkeep of the kitchen, as well as additional cleaning projects as directed by the KM and AKM
Adherence to all kitchen checklists, as directed by the KM
Proper maintenance and usage of kitchen equipment; alerting the KM when any issues arise
Proper maintenance and usage of the dishwasher; daily monitoring of chemical levels and testing of sanitizer solutions
Working knowledge of all ingredients used in food preparation; asking KM or AKM for clarification when questions arise
An understanding of the most common food allergies and how to meet guest’s special requests
