Casa Dorinda, Californias Premier Retirement Community is seeking a dynamic individual with a strong culinary & leadership background, to join our Team as the Executive Sous Chef.
In addition to our main dining room, construction is under way on a new Bar & Grill and a new Employee Café. The Executive Sous Chef will have an integral part in developing menus and systems and have the opportunity to make a direct impact on the residents dining experience. The Executive Sous Chef is responsible for leading all kitchen personnel in accordance with the Executive Chef and assists the Chef with production, kitchen performance and achieving culinary and financial goals. They must be strong leaders with a passion for quality and professionalism.
The Executive Sous Chef has administrative responsibilities in the areas of ordering, inventory, scheduling, etc., as well as maintaining food and labor costs.
Nights and Weekends are required
Required Knowledge and Skills:
Two years of Kitchen management and 4 years of line cook experience
Must possess advanced culinary skills and complete knowledge of all kitchen equipment and tools
Must exhibit leadership to develop others in culinary skills and improvement in systems/procedures daily
Knowledge of all applicable safety and sanitation practices
Must be able to delegate and multi-task
Strong communication skills; written & verbal
Must have the ability to utilize emotional intelligence in all communications
Must exhibit a professionalism and leadership that influences others positively
Basic computer skills to include food ordering software use, Excel, Word, Outlook, etc.
Must have a good understanding of financial management of a kitchen
Understands ordering, inventory control and maintaining proper par levels
Preferred:
Graduate of Culinary School or equivalent program
Catering and event experience
Bilingual English/Spanish
Serve Safe Certified
Experience in a retirement community setting, health management facility or hospital
Education or Equivalent Experience:
High School diploma or GED or equivalent experience
Supervisor/Managerial Experience
4 years minimum
Function Specific Experience:
Four or more years of related work experience; involved with the most complex requirements of the position.
