Job Description

SummaryThe Sundeck Chef will ensure the highest quality of food is served in their outlet. While maintain a professional, super clean, organized kitchen the Chef will work well with FOH leaders and be accommodating to special requests without temperament.

Essential Job Functions Comply with all policies and procedures for the Food and Beverage Department, The Little Nell, and Aspen Skiing Company Directly responsible for all culinary operations in AMC, Sundeck, Benedict’s and Banquets: Ordering, scheduling and approval, kronos payroll, production and quality of product Responsible for labor analysis and breakdown and assisting with the formulation and achievement of the annual culinary labor budget Responsible for food purchasing price point analysis, competitive analysis, produce waste analysis. Responsible to assist menu costing Responsible for keeping the walk-ins, loading dock, dry storage areas clean and orderly Responsible for providing for total maintenance and sanitation in all food production and service areas Orders and controls food storage and pars in unison with the operation Adhere to established purchasing, receiving, storing and issuing procedures Communicates any mechanical problems with the Engineering Department Maintains cleanliness of all kitchen production and storage areas Communicates discrepancies form standard with the Executive Chef Work a flexible schedule reflecting business demands, banquets, etc Assists with production of menu items Oversees the daily preparation and participates in food production, including temperatures of line product Assists with inventory Assist Executive chef in maintaining food and labor cost’s for all outlets in the Sundeck Complex Training and development of staff. Including proper use of equipment Schedules and monitors staffing levels being mindful of budget and volume levels Train personnel to ensure that all working procedures are implemented properly. Up to date with all current health and food safety measures Inspects product quality, pricing, and sources provide the best quality/value Responsible for the broad range of house mise en place and standard production items Maintains adequate par stock of these items anticipates business demands Assists in all Aspen Mountain Club and Banquet events Consistently checks market for new ideas, cooking techniques and products In the absence of the Executive Chef, attend weekly department head meetings, Sundeck F & B and EO meetings Participate in banquets functions Ensures approved vendors are being utilized whenever possible Responsible for assisting all team members in organization of kitchen items, to include, dry goods, kitchen equipment, storage containers, cleaning supplies and proper rotation and organization of all food deliveries

This role typically pays around $67,000, actual pay will be dependent on budget and experience, all our salaried roles are eligible for bonus.

Qualifications

High school diploma or equivalent Four years or more experience Culinary degree or equivalent

Supervision Given and ReceivedGiven: Exercises direct supervision over Culinary team. Responsibilities include, but are not limited to, frequent and detailed review of work, training, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.Received: Works under direct supervision of the Executive Sous Chef. Tasks are assigned according to specific procedures, and work is checked frequently. Instruction, advice and assistance are readily available.

Work Environment and Physical Demands Ability to reach, crouch, kneel, smell, taste, stand, walk or be on your feet for extended periods of time Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance
