Job Description

Summary The Chef de Cuisine assumes overall responsibility for the culinary aspect of assigned restaurant.

This role typically pays around $65k. Actual pay will be dependent on budget and experience, all our salaried roles are eligible for bonus

Essential Job FunctionsResponsible for the financial success of the operationResponsible for ordering, receiving, delivery, and rotation of food itemsProduce weekly schedules according to budget and forecasted numbersEnsure that all daily opening procedures are followedEnsure consistency of product using training guidesMaintain and promote proper food safety and handling protocolMaintain a safe & clean work environmentComplete and assign daily production and preparation listsContribute to the creation of fresh and innovative daily specialsWork as an active participant on the service line as requiredCommunicate with restaurant manager as needed to provide menu and pricing informationCommunicate with executive chef regarding the daily inventory and ordering processOversee daily kitchen closing and cleaning procedures to include walk-ins and freezersComplete and submit an accurate monthly inventoryAct as a coach to address any performance issues and document the sameResponsible for proper payroll procedureOther duties as assigned

Qualifications

Education, License/Certifications & SkillsCulinary or hotel management degree preferredAbility to multi task and prioritizeCompetent with computer programs such as Microsoft Office, Excel, etc.Must have the ability to work with numbersKnowledge of wine, food and cooking methodsPrior guest service experience is requiredPrevious food and beverage management experience of 2 years in similar operation requiredPrior culinary management experience is requiredEnglish is preferred

Working ConditionsIndoors v Outdoors - Indoors 95% of the time, Outdoors 5% of the time.Standing v Sitting - Standing 100% of the timeWork Environment -Working as part of a team; working AM, PM. Working holidays. Overtime may be required due to business need.The kitchen environment is one that can be hot or cold, floors can be slippery, and some areas poorly ventilated. General working conditions may at times be intense and stressful.

Physical RequirementsAbility to lift 40lbs and push/pull & carry and other items up to 100lbs.Constant reaching, handling, feeling, talking, hearing and seeing (near, far, depth perception, color vision, and field of vision). Occasional climbing, balancing, stooping, kneeling, crouching, tasting, smelling. Dealing with noise of lobby area as well as phones.
