The Portland Harbor Hotel located in the old Port a Victorian district of lovingly restored shops and restaurants; has an immediate opening for hotel Sous Chef
We are looking for a high level Sous Chef candidate to assist our Executive Chef in managing kitchen operations at Bluefin Restaurant as well as banquets.
ESSENTIAL JOB DUTIES:
+Assist Executive Chef with ordering, receiving supplies and managing inventories
+Comfortable managing the team when Executive Chef is at other properties
+Hands on position
+Banquet experience a must
+Encouraging team work
+ Assist in Menu development
+Ability to Multi-tasking
+Demonstrate positive attitude, high quality standards, and pride in presentation
+Set-up and break down stations according to kitchen guidelines, safety standards, and dining event needs.
+Monitor labor cost and manage employee time sheets
+Work cooperatively, efficiently and effectively as part of a dedicated and dynamic team.
+Weekly & monthly inventory to achieve budget food cost and reduce waste
+Comfortable with assisting Executive Chef in coaching and counseling team member
REQUIREMENTS:
+Must be comfortable working in a high volume, fast-paced environment
+Must be a clean organized leader
+Able to stand for extended periods of time
+Requires ability to lift 30 to 50 lbs.
+Availability to work various shifts, weekends and holidays
+Prior experience required - up to 3 years preferred
