We are currently in search of a Sous Chef for our Southeast Asian Food Truck called High Tide Kitchen. This truck is located at the tip of Cape Cod at 8 Highland Rd, North Truro on the property of Chequessett Chocolate, a bean-to-bar chocolate factory (www.chequessettchocolate.com) that manufactures a line of chocolate bars and confections from organic cacao beans from around the world.

High Tide Kitchen is open seasonally with a minimum requirement to be open from May 15th to September 15th, with the possibility to go later into the season if there is interest on the part of the food truck team. The concept for the truck is Southeast Asian street food, particularly Thai and Vietnamese but we welcome other Pan-Asian influences. All of us at Chequessett Chocolate have been avid global travelers for years, in particular the two owners Katherine and Josiah have traveled extensively throughout Thailand and Southeast Asia to soak up the food culture and be inspired by it. Our aim is to serve a respectful homage to authentic dishes with bold flavors and the conviviality and the good vibe of the Southeast Asian dining experience. Therefore the right person should have experience preparing Southeast Asian cuisine and should be comfortable navigating the Thai pantry. We work tirelessly to source local seafood and produce and hard to get ingredients from the Asian markets of Boston, NYC and beyond so we are looking for a chef that is willing to put forth a menu that is more adventurous than your average, westernized Thai restaurant.

Chequessett Chocolate is the commissary kitchen and provides a fully equipped commercial kitchen with refrigeration, dry storage, prep space and dish washing capabilities in addition to what is available on the truck. Although the truck is stationary and does not travel to and from events, there is a built in customer base of tourists and locals coming to visit the chocolate factory and now in it's 6th year in this location, the truck has become a destination in its own right. There are many advantages to a stationary truck that will be immediately recognized by anyone who has spent time working on a mobile food truck, including a steady supply of electricity and water and a commissary kitchen that is 10 yards away from the truck. Chequessett Chocolate is the owner and operator of High Tide Kitchen and acquired and built out this truck to satisfy a desire for savory foods to compliment the sweets, juices and coffee being served at our cafe. The truck has become a wonderful, robust addition to the property and has an enthusiastic, loyal fan base.

The ideal candidate would be responsible for helping to execute all aspects of the food truck. While we are invested in the success of the truck, we are not there to micro-manage the daily operations and hence are looking for someone with the passion, vision and experience to help run the truck inside and out. The Cape is seasonal and during the busy tourist months requires high-paced, non-stop service, which needs to consistently executed.

RESPONSIBILITIES

- Ensure proper food storage, handling, preparation and ServSafe standards

- Maintain required records including food production, inventory, income and meal counts

- Ensure customer-dining experience and outdoor dining areas are satisfactory

- Respond to customer preferences, allergies and complaints

- Maintain cleanliness of the food truck before, during and after service

- Maintain high professional food quality standards and assures that all regulations, sanitary and safety guidelines and accident prevention standards are met

- Uses company resources (time/labor, tools, supplies) in efficient, cost-effective manner

- Maintain high levels of professionalism and courtesy when interacting with other team members, customers, and chocolate factory staff.

- Maintain regular email and phone correspondence

- Participates in weekly management meetings

QUALIFICATIONS

- Ability to prepare variety of Southeast Asian cuisine styles including (vegetarian, vegan, gluten-free, dairy free options etc.) based on customer preference

- Flexibility to work nights, weekends and holidays as needed

- Excellent communication skills both verbal and written

- Excellent interpersonal skills and a collaborative management style

- Physically fit and capable of lifting 50 lbs

- Valid driver's license and reliable transportation
