Food Service Manager (Head Cook)/Kitchen Votech Instructor
COOKING/KITCHEN RESPONSIBILITIES
Directly supervise and oversee the other cooks to ensure that they are following the kitchen rules/protocols and LUC program.
Teach and work with boys in preparing/cooking meals to include training on safety, following recipes, utilizing tools/equipment, training on proper sanitation, and the working knowledge in the kitchen.
Ensure that meals meet nutritional requirements. In advance, plan daily meals and ensure ingredients/supplies are available. Responsible for placing an order for needed food items.
Maintain cleanliness and a sanitary environment in the kitchen area (including appliances, equipment, food pantry, fridge/freezer, etc.)
Organize food pantry, supply closet, freezers, and refrigerators to include proper labeling of food items with dates.
Practice good stewardship with donated/available resources. Responsible for proper recycling.
Assign and supervise boys with chores and clean-up responsibilities.
Enforce consequences and understand rules, consequences, policies, and the basis for them.
Adhere to and follow OSHA and food permit regulations.
Be objective and fair. Dont show favoritism.
Assist boys with preparing their end of month vocational presentation to include new skills and training gained during the month.
Always be aware of and use safety precautions that would eliminate or reduce accidents.
REQUIREMENTS
Willing and able to work with troubled boys
Be at least 21 years of age
Have a high school diploma or GED
Experience in cooking for large groups is a plus
