The Director of Dietary/Nutritional Services is responsible for planning, directing, and organizing the functions of the Food Service Department to ensure the provision of regular and special dietary services for Residents, employees, and visitors of the facility. Supervises and coordinates sanitation and safety needs in all areas of the facility. ResponsibilitiesA day in the life of a Director of Dietary Services at Hackensack Meridian Health can be described as: Communication:

Demonstrates effective communication skills.

Holds monthly communication meetings with department staff.

Plans, schedules, and maintains logs for all meeting.

Shares information with director in a timely manner.

Participates in internal and external committees as requested by supervisor.

Participates in Performance Improvement meetings.

PI rounds/ projects are done monthly and all issues are identified with plans of action.

Prepares monthly PI reports. Maintains required records, reports, statistics, etc.

Customer Service:

Delivers the highest level of service to all residents, families, and guests.

Promotes customer service principle via in-service and education.

Assists residents and family members with complaints and concerns.

Ensures issues are resolved timely and appropriately.

Regulatory Compliance:

Documentation is complete and accurate.

Keeps all records up to date including dietary in-services, temperature logs, tray cards, staffing and attendance, etc.

Prepares accurate and complete production documents including: production sheets, prep and pull sheets, and catering function sheets.

Maintains and posts daily production and preparation sheets reflecting quantities required based on menus, forecasts, etc.

Maintains kitchen in a sanitary environment.

All personal and food safety rules are followed.

Uses all equipment safely and properly.

Reports unsafe or damaged equipment and other safety concerns to director.

Nutritional Development:

Develops specifications for food, equipment and supplies.

Recipes and menus are assessed to assure nutritional adequacy.

Services are designed to accommodate special requirements.

Special Events:

Supplies ancillary departments with refreshments that are suitable to meet all diet needs.

Creates a dining environment that is consistently appealing and appropriate.

People Management:

Manages and/or assists in the recruitment, development and supervision of team members.

Creates and sustains an environment that fosters team member engagement.

Establishes clear objectives tied to department and/or organizational strategic goals.

Coaches, counsels and evaluates performance of direct reports.

Financial Management:

Involved in the development and/or management of budget for assigned areas.

Regularly monitors relevant key financial indicators and performance metrics, modifying business activities where needed in response to changing financial situations.

Data Management and Analytics:

Track, analyze, and report on relevant data and metrics as needed and/or requested.

Develop, recommend and/or implement actions or process improvements as appropriate.

Other Duties as Assigned.

QualificationsEducation, Knowledge, Skills and Abilities Required: Bachelor's degree

Knowledge of food safety, sanitation, regulatory compliance, and guidelines governing dietary services in a long-term care facility

Excellent communications and writing skills

Knowledge of Microsoft Word, Excel, Outlook

Prior supervisory experience, preferably in a Long Term Care setting

Education, Knowledge, Skills and Abilities Preferred:

Serv Safe Certification

CDM (Certified Dietary Manager) from an accredited entity
