Job Description

The Cook cleans and prepares raw products to a ready-to-finish state, including vegetables, fruits, proteins and condiments; ensures impeccable kitchen sanitation; and participates in achieving culinary product quality and cost goals

ESSENTIAL RESPONSIBILITIES & TASKS

Cleans and cuts to exact size all raw products used in the restaurant including vegetables, fruits and proteins

Formulates various sauces, condiments and prepared foods

Ensures that the kitchen is immaculately clean and compliant with all regulatory requirements for food handling and sanitation

Helps achieve food, labor and cost controls that are established by senior management and in line with industry standards

Must be willing and able to perform any related or similar tasks assigned by their supervisor

QUALIFICATIONS

The employee must possess the following experience, education and skills and/or be able to explain and demonstrate that they can perform the essential functions of the job, with or without reasonable accommodation, using some comparable combination of knowledge and aptitudes

Experience

Two to three years of progressive experience in food preparation required

Experience as a prep cook essential

Experience in several stations and positions in a kitchen including hot foods and cold foods, and diverse cooking techniques desirable

Some knowledge of food sourcing, procurement and handling; and food and labor cost control

Education

Two-year college degree or an equivalent culinary degree preferred

Certificate of Sanitation from the American Sanitation Institute

PERSONAL CHARACTERISTICS

Good communication and interpersonal skills, especially verbal, with co-workers, management, and other parties

Neat, clean and organized worker

Good self-discipline with an ability to complete tasks independently

Ability to manage multiple tasks and issues in stressful situations and take responsibility in a professional manner

Excellent knife skills

A well-developed sense of taste and smell and a passion for food and cuisine

OTHER

Legally authorized to work in the United States

Physically fit and agile; able to carry 40 pounds
