We are looking for an incredible Executive Chef to lead our kitchen at INDAY All Day, our full service restaurant in Williamburg, BK! This is the ideal role for an experienced culinary leader (Executive Chef, Sous Chef or Kitchen Manager) that is looking to head the kitchen at an exciting new brand and make their mark on the NYC food scene. As the Executive Chef of INDAY All Day, you will have the opportunity to develop new recipes, lead the kitchen team, and serve as the culinary face press & media.

INDAY All Day is an all day restaurant inspired by the vibrant flavors, warm hospitality and rich culture of the modern Indian table. From fragrant morning chai’s, to a bustling lunch and evening cocktails, INDAY is designed to bring true joy to your life. Our menu spans from traditional home-cooked recipes to unique interpretations of classic dishes, including items such as fire-roasted kebabs, breads, warming curries, fresh salads, and delectable cocktails.

The Executive Chef will manage day-to-day culinary operations and drive excellence in the kitchen. Our culinary ethos is built on the idea of ‘food karma’: that how your food is sourced, who cooks it and the space in which it is served impacts how it makes you feel. This guides every aspect of our hospitality and business practices, from the mindfulness rituals that begin our daily routine, to sourcing high quality produce that reflects the vitality of the season.

The ideal candidate has a robust background (3-5 years) and track record of success leading fine-casual or full-service kitchens. You will report to the Director of Operation, work very closely with our General Manager, and collaborate with our CEO on developing and executing our new concept and building a vibrant and positive work community in our kitchen. Experience with Indian food is highly preferred, though not required.

WHAT YOU'LL DO

- Hire, train and develop BOH professionals through mentorship and hip-to-hip coaching

- Manage BOH controllables including labor and cost of goods. This includes food ordering, inventory and scheduling BOH

- Maintain food quality through constant tasting and engage in a process of continuous improvement with all recipes and products

- Ideate, create and innovate - our culinary program is constantly evolving. You will be continuously working on new dishes to add to the menu while improving existing ones

- Manage and maintain the INDAY all day recipe book, tracking adjustments, tweaks and improvements and updating existing materials

- Maintain the physical restaurant space and ensure that the restaurant is DOH compliant at all times

SPECIFIC RESPONSIBILITIES

- Ensure prep, service, and day-to-day kitchen operations run smoothly and efficiently.

- Make sure that recipes are being followed and executed properly everyday and that company tools and systems (cooling logs, time stamps, order guides, production guides, prep lists) are being filled out and properly used.

- Check food quality before lunch and dinner service and do daily line checks for mise en place.

- Oversee ordering, prep lists and production.

- Maintaining a clean and organized work environment both on the line and in the prep kitchen.

- Ensure that the restaurant is compliant with all health and safety code requirements at all times.

- Work with the General Manager to manage food and labor costs so the restaurant can hit its financial targets.

- Expedite and fill in on stations as needed.

- Maintain an environment of respect and learning consistent with our company values

SKILLS + REQUIREMENTS

- 3-5 years of senior-level culinary management experience in a fine-casual or full-service dining environment or similar, working with a variety of foods

- Experience with Indian food highly preferred

- Open availability on nights and weekends is A MUST

- Ability to multi-task and maintain a calm demeanor under pressure

- Solid track record of success in previous assignments demonstrating upward career tracking

- Ability to work 10 hour shifts with the ability to stand, sit or walk for extended periods of time and to grasp, lift and/or carry up to 50 lbs as needed

- Strong communication skills, including fluency in English (Spanish a plus)

- DOH Food Safety Certificate
