The Bakery Assistant Manager supports the Bakery Manager in overseeing the production of bread products for an Eataly location, including but not limited to: breads, pizza alla pala, rolls, focaccia and seasonal items. Reports to the Bakery Manager and assists with managing the bakery team in a 24-hour operating bakery.  Prepares bread products for restaurant and retail operations in accordance with Eataly’s authentic Italian recipes and quality standardsAssists the Bakery Manager with leading, directing, training and developing bakery team members, following prescribed training programsMaintains and nurtures natural yeast, local and organic flour, and naturally leavened productsOrders ingredients and supplies for the bakery and its related areasCommunicates with management outside of the bakery in the absence of the Bakery ManagerCollaborates with Bakery Manager to oversee Front of House retail and Quick Service bakery operationsCompletes administrative duties when required, including: ordering, scheduling, assessing financial information, budget monitoring and inventoryMaintains a clean and sanitary food production area according to Department of Health standardsDocuments, investigates, elevates and resolves all employee and guest incidentsPerforms other duties as required or assigned
