The Kitchen Manager oversees the day to day operation of the food service location, managing staff, product, production levels, and sanitation levels to ensure a great customer experience for our guests.

Essential Functions:

1) Effectively supervises assigned employees, including the following:

a. Interviews, selects and trains employees;

b. Coaches employees in proper job performance techniques and procedures;

c. Directs work of employees and sets/adjusts hours of work;

d. Maintains records on employee productivity and appraises employees productivity and efficiency to recommend promotions or other changes in status;

e. Handles employee complaints and disciplines employees when necessary;

f. Apportions work among different employees;

g. Monitors or implements legal compliance measures;

h. Determines the type of materials, supplies, or tools to be used by employees and controls the flow and distribution of materials and supplies; and

i. Provides for the safety of employees and the property of Cleveland Metroparks.

2) Regular and predictable attendance is expected and required. All Cleveland Metroparks employees must be prepared to work flexible schedules, including evenings, weekends, and/or holidays as required.

3) Oversees the day to day operations in the back of the house in the assigned food service location. Works efficiently, safely and quickly producing high quality food and ensuring guest satisfaction.

4) Ensures a positive guest experience by monitoring food quality: Provides he best quality food; takes care of guest's needs/food with immediacy and accuracy; works closely with the management team in responding to customer complaints and ensuring the success of the restaurant as a whole.

5) Adheres to portions and preparation guidelines for cost effectiveness and consistency.

6) Maintains cost management and profitability: Ensures high quality product is presented to guests; places food orders and monitors food quality by managing prime and local vendors; completes accurate physical food inventory; ensures kitchen personnel are following standardized recipes to ensure consistent product; and manages preparation of food to ensure proper portion control to minimize loss of profit.

7) Works with the General Manager of Culinary Operations to ensure high quality product is being utilized at all times and proper specifications of the recipes are being followed. The incumbent also provides input regarding operations, recipes and menus to the General Manager of Culinary Operations.

8) Maintains proper staffing levels to ensure quality service while being mindful of labor costs.

9) Maintains a clean, safe facility and ensures compliance with Health Department codes and regulations.

10) Keeps direct supervisor promptly informed of key/significant issues or concerns.

11) Carries out duties and responsibilities in a safe and efficient manner to maintain a safe work environment and surrounding area for oneself, co-workers and public. Responds to hazardous situations and/or potentially unsafe conditions by taking corrective action as capable and promptly notifying supervisory personnel.

12) Updates and enhances own knowledge by involvement in continuing education for professional growth (i.e., attends relevant conferences, seminars, in-service trainings, and certification programs).

13) Performs related duties as assigned or apparent.

Qualifications:

High school diploma or equivalent required. Associates degree from accredited culinary school preferred. A minimum of 3 years of experience in a high volume restaurant with focus on scratch cooking required. Previous supervisory experience within a kitchen setting preferred.

Must possess all certifications and uphold the guidelines required by the Cuyahoga County Board of Health and the City of Cleveland Department of Public Health, including the ServSafe certification.

Operator level knowledge of safe and proper food service operations, including food service equipment and MICROS POS system

Thorough knowledge of obtaining and maintaining temporary and permanent food licensing, Cuyahoga County Board of Health and City of Cleveland Department of Public Health rules and certifications.

Ability to develop and maintain effective working relationships with stakeholders, including employees and the general public.

Ability to speak and write clearly, concisely and persuasively using correct grammar, spelling and punctuation with ability to communicate one-on-one or in group settings.

Ability to perform work with a high degree of accuracy and organization.

Management skills and strong business acumen, including problem solving, vision, ability to manage multiple programs and meet deadlines, collaboration, leadership, decision making and ability to analyze diverse facts and develop clear and concise reports and recommendations.

Ability to work cooperatively with others.

Proficiency in software programs including all Microsoft Office programs.

Mature professional attitude and considerable discretion, including ability to manage confidential information.

Ability to perform with considerable independence and initiative.

Salary: $38,556.00 - $48,196.00

Work Schedule: Must be able to work weekends, holidays and evenings as required and necessary.
