Experienced line cook wanted at Grit, a restaurant focusing on food from our local farms. Reliability and flexibility are essential, as are excellent knife skills, drive, commitment to delicious food, team orientation, good communication skills, patience, self discipline, food knowledge and ability to take direction. Must be able to stay on task and work independently. Must have interest in our food systems on a local, national and global level. Must be able to work in a kitchen where we change our menu daily. Must have or be able to obtain food handler's card. Position would begin as part time and move to full time for the right candidate.

POSITION: LINE COOK

SALARY: Hourly + tips DOE

BENEFITS: Comp Shift Meal; 50% off all purchases, discounted CSA membership at local farm after time 6 mo.

REPORTS TO: Chef, Sous chef, General Manager

HOURS: This is a part-time position averaging 20 hours per week including weekends. The position will move to full time for the right candidate. You may be required to work extra hours and/or days on an irregular basis due to unforeseen circumstances, emergencies and/or special events.

REVIEWS/RAISES: You will receive a 1 month performance only evaluation. You will then receive salary and performance evaluations at 6 months and 1 year. After that, evaluations will occur yearly on or near your start date anniversary. Salary review will be based on details covered in the reviews and overall company financial health.

POSITION SUMMARY: The Line cook is responsible for assistance in weekly execution of the menu at Grit in collaboration with the Chef/Sous chefs. The menu changes weekly dependent on what's available therefore flexibility and motivation is essential.

MINIMUM REQUIREMENTS:

-2 years line/prep experience

-Desire for being in and excelling in a scratch kitchen

-Professional presentation all around

-Cleanliness in all functions

-Desire to learn about local food systems

-Desire to learn excellent food handling practices

- Interest in our local farms

ESSENTIAL DUTIES/RESPONSIBILITIES:

-Report directly to the Chef and/or Sous chefs to receive direction

-Prepare food items in accordance with production requirements and quality standards

-Execute all dishes precisely and expediently

-Maintain proper par stocks and communicate inventory needs proactively

-Ensure proper stock rotation in all areas of the kitchen and minimize wastage

-Ensure that all food items are properly stored and labeled at all times

-Maintain hygiene standards within guidelines of health codes and Grit standards

-Ensure that all kitchen equipment is cleaned and sanitized after every use

-Report all malfunctioning equipment to Chef and/or sous chef

-Help to receive all goods and break them down for storage on a FIFO basis

-Any other duties assigned by the Chef and/or Sous chef

-Maintain a safe sanitary work environment at all times

QUALIFICATIONS:

EDUCATION/CERTIFICATION: A combination of education and experience is a plus; current Oregon State Food Handler's Permit or ServSafe certification; computer literacy and email accessibility.
