JOB DESCRIPTION INFORMATIONPosition Title : Specialty Meats ButcherType of Job Description : New Job DescriptionPosition Type : FulltimeJob Catalog Position Title : KniferFLSA Status : HourlyDepartment : OperationsLocation : Columbia, MOBusiness Unit : Principe FoodsReports to : Production SupervisorYears of Experience : 1 or more years of butcher or debone experience requiredJOB SUMMARYOur Prosciutto Debone/Trimmers are craftsmen that have honed their knife skills to ensure that our specialty meats are prepared and trimmed to perfection.Experience as butcher or debone/trimmer is required and experience in a meat production facility is strongly preferredThey will prepare various cuts per specifications, including type of cut, date and destination. They will monitor food quality, perform their tasks in compliance with all internal and government food safety and personal safety requirements.Pay range for this specialized role is $21.50 to $25.00 per hour based on experienceESSENTIAL DUTIES AND RESPONSIBILITIESFollow all company and governmental safety and security policies and proceduresUnderstand knife safety, use and sanitize all equipment as requiredDevelop & use good knife sharpening skills, as for assistance if neededDe-bone meat, removing excess fat, gristle and bone to comply with product specificationsInspect debone product to ensure quality compliance before sending next team for processingTrim prosciutto post curing to product requirementsMust keep equipment & work areas clean and follow proper food safety protocolsInspect meat or meat products and/or packagingTrain other team members as neededStay aware of your surroundings and notify a supervisor if you recognize a hazardOther duties as assignedThe above statements are intended to describe the general nature and level of work being performed by people assigned to this job. Reasonable accommodations may be made to enable individuals to perform the essential functions.1+ years of experience with butchery, meat deboning/trimming required, preferably in a meat processing facilityWork regularly in temperatures are near or below freezing (Coolers, Loading Dock Freezer)Work in damp or cold conditions (20-30 Degrees-Fabrication)Work in areas that require you to lift, pull, or push 50 lbs.Work with sharp knives or a cutting toolWilling and capable of working overtime when necessaryAvailable to work Day and NightsWilling and capable of working SaturdaysLIFTING/ PUSHING/PULLING – 10 lbs. -50 lbs. productionNEUTRAL WRIST - Repetitive hand motions and grasping.REACHING – Reaching for product on the conveyor belt with hooks, reaching for boxes, or bagsSTANDING – Constant standing for 8 to 10 hours per day, 6 days a week (Loading dock 7 days as needed per schedule.) (2 allowed breaks are scheduled based on the union contract and operational requirements.)WORK ENVIRONMENT AND PHYSICAL REQUIREMENTSProduction and maintenance settingsExposure to various chemicals, machinery, and knivesSlippery floors, cold temperatures, and loud ambient noiseAbility to work 40+ hoursGood attendance and safety recordsThe schedule for this position is typically Mon - Fri.
