Job SummaryTexas A&M Performance Nutrition has the vision to be regarded as the model program that sets the standard for collegiate performance nutrition. Working as the General Manager of the Nutrition Center and Executive Chef, you will be responsible maximizing student athlete health and performance through the execution of nutritionally optimal meals for the Texas A&M Athletic Department. The Slocum Nutrition Center General Manager will be responsible overseeing and promoting professional growth and development of the entire team. This position will work in collaboration with the director of performance nutrition and performance nutrition staff to provide fresh, local, sustainable and nutrient dense meals tailored specifically to the need of the Texas A&M Athletic Department.Management ResponsibilitiesResponsible for managing the culinary staff, directing the work of the culinary team and managing employee performance.
Performance Chef ResponsibilitiesDevelop recipes, source, create and execute menus for all Slocum Nutrition Center meals with a focus on nutrient dense foods to optimize student athlete health
Coordinate, engage and guide staff regarding menu execution, ingredient utilization, equipment operation, kitchen flow, time management, food safety and sanitization
Ensure staff executes procedures in accordance with food/safety codes
Collaborate with Director of Performance Nutrition to establish culinary budget, including menu costing, inventory tracking and invoice processing
Establish relationships with quality vendors to procure seasonal,local, sustainable ingredients
Athlete Centered Approach
Understand the needs and directives of the Director of Performance Nutrition and demonstrates the ability to translate vision into food service operations
Collaborate and contribute as member of culinary team within the performance nutrition department and advise on culinary methods and techniques for meals related to the athletes' individual metabolic and nutritional needs
Demonstrates knowledge of nutrition and performance nutrition and understands nutrition trends for collegiate athletes
Understands requirements from Performance Nutrition Department regarding individual needs, different sport needs, periodization, allergies, body composition, portions and special diets for menu development and meal plan execution
Adaptability to performance nutrition, player and staff requests
Demonstrates creativity and variety in menu development featuring simple, elevated and refined dishes
Skills and Abilities Excellent leadership, organizational skills and attention to detail
Exceptional business etiquette and client relations
Conformity to the highest standards of personal integrity and ethics
Understanding of menu specifics including, but not limited to, dietary restrictions, food allergies/intolerances, preparation processes, holding/serving temperatures and HACCP guidelines
Financial management expertise
Experience and EducationA minimum of 5 years in the food & beverage industry as an executive chef including athletic nutrition
Bachelor's degree in culinary arts, nutrition, food science or related field
Education and experience with various performance nutrition techniques
Advanced certifications including ACF, Prochef, etc.
