This position is full time and requires flexible hours to include days/evenings weekends and holidays. The schedule is based on functions being held that week plus time for cleaning/maintaining banquet and storage areas.

Educational/Vocational Preparation: High school graduate or equivalent is preferred. 1-3 years Catering experience and 1 year minimum supervisory experience. Varying knowledge of food/wine service. Must be 21 and able to serve alcohol.

As captain you will be required to have full knowledge of all banquets and meetings held. At the beginning of each shift, you will review the Banquet Event Orders to be aware of all functions scheduled for that day. Must be neatly attired and have a professional and congenial attitude. Ensure that all workers are present and assigned duties. Make sure there are enough wait staff. Ensure that wait staff is nearby to take care of each guest and is alert all times to ensure guests are given every attention. Assign wait staff to the kitchen after each meal to clean up equipment, food and beverage and make sure it is properly stored. Provide supervision to wait staff and verify their arrival times and relief periods. Keep function and banquet storage area clean and in an orderly condition for next functions. Set up for next function as soon as possible. Departmental reports for management must be neat and accurate. Works closely with kitchen personnel to coordinate cooking, food presentation and delivery times for each function. Maintains his/her work area in a clean, organized state. Maintains proper sanitation practices. Handles all hotel equipment carefully. Performs job duties in a safe manner to minimize the probability of accidents. Maintains a friendly, courteous manner with fellow employees and hotel guests at all times. Reports any occurrences of an unusual or critical nature to his/her supervisor. Responsible for reporting to supervisor at the beginning and end of each shift, so that work assignments can be made, and work performed can be inspected. Performs other duties as assigned.
