Kitchen Manager

We are seeking a kitchen manager for our established restaurant in Carytown. We are not a corporate operation, which means you can wear what you want (within reason), you wont have multiple layers of management breathing down your neck, and youll work mostly without supervision. With this freedom comes responsibility as the profitability of the food program will rest largely on your shoulders. This is a great position for a self-starter looking to build their resume or settle into a very comfortable work environment.

Responsibilities:

-Take direction and communicate with management regarding maintaining a profitable operation, standards of service, quality, and efficiency

-Keep morale high in a small, family-style operationpeople skills are a must

-Problem solve and develop systems that prevent past problems from recurring

-Order food, wine, and disposables for entire restaurant according to weekly pars and forecasted sales

-Cost out menu items (both raw material cost and labor) to ensure target margins are met

-Compare costs among vendors quarterly

-Develop a lean, variable schedule that fluctuates with seasonal demand to meet payroll goals

-Hire and train staff in cooking, developing new menu items, costing, and BOH best practices

-Develop new menu items and specials with costs and margins in mind

-Adhere to city food safety protocol, and train staff in the same to avoid negative reports and proper food safety standards

-Direct catering and special event fulfillment

-Accurately track all costs for monthly accounting reconciliations

-Repair items that need attention within reason

Requirements:

-5 years BOH experience, 3 in management that included hiring, training, scheduling and costing

-Ability to self-manage with minimal direction and supervision

-Experience coming up with new menu items and specials

-Ability to multitask in a fast paced, stressful environment

-ServSafe Certification

-Excellent oral and written communications skills

-Proven leader

-Ability to interface with customers in a confident, comfortable way

-Ability to lift 50lbs+

-Ability to stand and work for 12+ hours a day
