Seeking Food Service Workers and Cooks to work in dining facility on U.S. Customs and Border Protection Training Site.

Food Service Worker responsibility is the overall sanitation (cleaning) of the dining facility. The secondary area of responsibility includes assisting cooks in preparation, set-up, and service of meals.

Food Service Worker Qualifications:

Must be able to read, write, speak, and understand English.

Must be able to pass security background investigation.

Food Service Worker Physical Requirements:

The ability to lift or move objects weighing up to 50 Lbs., and the ability to sweep, mop, clean, push carts, mop buckets, etc. and push objects weighing up to 50 Lbs.

The ability to work continually standing and walking, and frequent stooping, reaching, pushing, pulling, kneeling, and bending.

The ability to climb and to work from a ladder (up to 10ft), if required.

The ability to scrape, soak, scour, scrub, rinse, and sanitize pots, pans, serving pans, salad line inserts, cooking utensils, sheet pans and baking pans, etc. Clean and maintain the pot cleaning and storage area, equipment, racks, floors and walls.

The ability to set up and operate mechanical dishwasher. Remove strainer pans, spray arms for preventive maintenance and cleaning.

Set up glasses, silverware, dishes, trays, napkins, condiments, and cold menu items such as salads desserts, bread, and cold beverages on serving lines.

Cooks are responsible for all aspects of the food preparation and serving, must have three to five years food service experience working in an institutional-style facility, military experience a plus.

Cook Qualifications:

Read, write, speak, and understand written food service material.

Within the past five years, three years general experience in volume food preparation and service.

Two years' experience in preparation of short order and cafeteria style, multi-entrée menu meals (breakfast, lunch & dinner) that includes preparation of soups, salads, gravies, sauces, vegetables, meat, fish, poultry, breads, deserts, pastry and all other foods constituting a meal.

Knowledge of progressive cooking techniques, and knowledgeable of the characteristics of the various foods they prepare such as color, flavor, consistency, texture, and temperature and cooking time requirements.

Must be dependable

A high school graduate or GED.

Possession of a culinary degree from an accredited institution waives this requirement.

Cook Physical Requirements:

The ability to frequently move objects weighing up to 40 pounds unassisted, and occasionally lift or move objects weighing over 40 pounds with assistance.
