The Opportunity:

We are seeking a highly skilled and experienced Pantry Cook to join our elite culinary team. This is not an entry-level position. The ideal candidate will have a refined palate, an eye for detail, and the ability to thrive in a fast-paced, high-pressure environment. You will be responsible for the cold side of our kitchen, creating the first and last impressions of our guests' meals.

Key Responsibilities:

Meticulously prepare all cold appetizers, salads, antipasti, and desserts according to Pueos Osteria's exacting recipes and standards.

Expertly fabricate and plate crudo, carpaccio, and other raw seafood dishes with precision and artistry.

Manage and maintain our station's mise en place, ensuring the highest quality and freshness of all ingredients.

Ensure all plates are visually stunning and consistent, reflecting the elegance of our restaurant.

Monitor and manage inventory for the pantry station, conducting regular stock rotation (FIFO) and minimizing waste.

Uphold the strictest standards of sanitation and food safety (HACCP) at all times.

Collaborate seamlessly with the sauté, pasta, and grill stations to ensure timely and harmonious service.

What You Bring (Qualifications):

A minimum of 2 years of experience in a pantry/garde manger or relevant cook role within a high-volume, fine-dining restaurant.

A proven track record of excellence and reliability in a professional kitchen.

Extensive knowledge of Italian ingredients, cheeses, cured meats, and flavor profiles is a significant advantage.

Impeccable knife skills and a strong understanding of classic culinary techniques.

A relentless attention to detail and a deep-seated pride in your work.

Ability to remain calm, focused, and efficient during peak service.

Strong communication skills and a collaborative, team-oriented mindset.
