The Eye Tooth Tavern & Eatery is hiring a Sous Chef who is excited to put their stamp on a new restaurant and nurture a strong bond with the community as a member of the Tooth Family. If you are innovative, energetic, and ready to develop specials and menu items that will impress Anchorage, we want you on our team.
Pizza is not the only thing on the menu! We are seeking a Sous Chef with strong technical skills and upscale cuisine experience. You should thrive in a fast-paced environment, seamlessly coordinate between kitchen stations, and eagerly adapt to changes. Join us as the Eye Tooth Sous Chef and work alongside Executive Chef JD to bring our newest establishment to life on King Street this winter.
Some of the skills and qualifications we are looking for:
Previous kitchen supervisory experience.
Have and maintain a current ServSafe Certification.
Knowledgeable in a variety of cooking techniques and flavors.
Experience training kitchen staff and implementing procedures.
High level of creativity and reliability.
Strong communication skills, both written and verbal.
An attitude that is motivated, detail-oriented, and committed to quality.
In this position, a few of your responsibilities will include:
Actively run multiple lines, ensuring timely and quality food service.
Ensure compliance with state and local health codes by monitoring kitchen staff and their adherence to in-house systems
(temperature sheets, proper rotation, food labeling, etc.).
Train kitchen staff to properly use order forms, waste logs, temp sheets, and inventory forms. Monitor for accuracy and consistency regularly.
Work closely with FOH managers to effectively communicate kitchen statuses, food supply, quality concerns, unusual operation changes, and other relevant building-wide needs.
Actively monitor consumption and waste, adjusting pars as needed for seasonal and occasional business fluctuations.
Work as a team with your fellow co-workers and treat each other with kindness and respect.
Menu management and development:
Review current recipes and sales figures to identify inefficiencies or quality improvements and to maintain food cost targets.
Assist in developing and implementing new menu items and monthly special menus, including creating, costing, and training staff.
Communicate any needs or concerns with warehouse and prep departments that affect the quality, cost, and/or efficiency of current or future menu items.
Work with the management group to coordinate and create menu changes.
Use Margin Edge to track food costs and update menu pricing.
