Chief Cook ship/Mtn camp Kitchens
ENHYDRA . Flagship Vessel to a Marine Life Science Camp . Catalina Island
Seeking full-time year round employment, has to live onsite or aboard vessel while programs are running March-Novermber. Chief Cook for our Summer Ship Camp Season (June-August 6 days a week). The rest of the seasonal year is 3 day o 5 day programs.
Enhydra is the Flagship Vessel and Camp Pollock is the Mtn camp location to Mountain and Sea Educational Adventures, a non-profit 501 (C) 3 which conducts marine life science camps on and around Catalina Island.
Overall Job Duties
Live onsite while program is rusnning and prepare, serve meals during our Summer Ship Camp Season: March-May Mainland Mtn program (40-250 campers) Ship program June 1 - August 30, 2019 (40 PAX 6 crew)
Manage commercial galley on sites or ship - organization, efficiency, cleanliness
Menu planning - healthy, hearty meals for campers with high activity days
Provision planning and ordering within budget
Food Preparation and serving
Support staff: Kitchen Facilities & crew(varied depending on numbers)
Manage one other cook at other site and oversee Kitchen staff, "Kitchen Patrol" etc.
Take-away lunches are prepared on the ship at home berth each week (Tuesday or Thursday); and delivered to ferry boats or with camper transports on ENHYDRA (Wednesday early am or Friday early am).
During weekend camps - live aboard ship (Friday evening - Sunday afternoon).
Promotion after 1-2 years for this position: Food Service Director
Pay Rate: $125-200 a day plus %5 raise upon satisfactory evaluation every 6 months.
Accommodations: Room provided 7 days per week, board provided while camp is in session.

Health insurance package: After 4 seasons: Employee may enroll in Anthem Blue Cross Health Insurance PPO basic coverage 'elements hospital' plan. MSA covers $20 of the monthly premium. The rest of premium is deducted from paycheck. Employees may enroll in a higher plan with the same dollar amount of contribution from MSA as they would have received from the basic plan.
