About the Role
We are seeking an experienced Pizzaiolo with strong technical skills in operating a traditional wood-burning oven. The ideal candidate has a deep respect for authentic Italian pizza-making, excellent dough-handling abilities, and the discipline to maintain consistent quality during fast-paced service. This role requires precision, speed, and the ability to work as part of a collaborative kitchen team.
Key Responsibilities Wood-Burning Oven Operation
Manage and maintain a live wood fire throughout service, including temperature control and wood placement.
Monitor oven heat zones to ensure even baking and consistent pizza quality.
Safely operate pizza peels and handle rapid rotation of pizzas during high-volume service.
Pizza Preparation & Execution
Stretch, shape, and prepare dough according to house standards.
Assemble pizzas with accuracy, attention to detail, and consistency in toppings and presentation.
Cook pizzas to the correct texture, color, and doneness following the restaurant’s style and recipes.
Dough & Ingredient Management
Assist with daily dough production, balling, proofing, and inventory rotation.
Monitor ingredient freshness and prep levels to ensure smooth service.
Follow all food safety standards (HACCP), including proper storage and labeling.
Kitchen Collaboration & Cleanliness
Work closely with the kitchen team to maintain an efficient, clean, and safe workstation.
Participate in opening/closing duties, oven cleaning, and equipment maintenance.
Communicate proactively with chefs and managers about ingredient needs or operational issues.
Qualifications Required:
Minimum 1–2 years experience working as a pizzaiolo, preferably with wood-burning ovens.
Strong understanding of pizza dough behavior (hydration, fermentation, temperature).
Ability to work quickly and accurately in a high-pressure environment.
Reliability, professionalism, and good communication skills.
