Lead Line Cook Wanted for Nights at Della's Woodfired Pizza

We're looking for a hard working and talented cook to join our culinary team on a full time basis. Our lead line cook is responsible for working the line on a nightly basis, and overseeing dinner service in the absence of our Chef De Cuisine. Specific experience with dough management and/or cooking with wood fire is a plus for this role!

Our restaurant is dinner-only with night shifts starting at 3pm. Ideal candidates will have 5+ years experience in a high volume/fast-paced kitchen environment and be able to provide references from former or current employers. Our ideal candidate has a track record of leading by example and functioning well within a team.

Cooks are tipped out by service staff and by guests. All gratuities are included on biweekly paychecks.

Della's is a wood-fired California pizzeria with seasonal share plates. Service is fast paced and our cooks work efficiently and cleanly in our open kitchen, taking pride in the food we present to our guests. Our lead line cook is responsible for closing the restaurant nightly, ensuring the team's adherence to all cleanliness and sanitation standards.

This is a great role for someone looking to embark on a path to leadership! Our lead line cook works directly with our Chef to create exciting, seasonal specials that serve to achieve food cost goals and spice things up alongside our seasonally-driven menu. There is good opportunity in this role to learn about and/or hone skills related to food costing, inventory management, and ordering.

Primary responsibilities:

- Perform delegated tasks from Chef and ownership

- Day to day food preparation according to company standards

- Follow recipes, portion controls and presentation specifications as set by the restaurant

- Close the kitchen in the absence of the Chef, adhering to set checklists

- Maintain a nightly prep list of station needs

- Follow the FIFO method to maximize freshness

- Assist in food inventory and control

- Clean food prep areas, equipment, utensils and strictly adhere to sanitation, food safety, and hygiene guidelines

- Other duties or responsibilities as assigned or required
