Employment Type: Full-Time

Master Purveyors is seeking a skilled and experienced Butcher to join our production team. The ideal candidate will have strong knife skills, a deep understanding of meat fabrication, and the ability to work with speed, precision, and consistency to meet customer specifications. This role requires strict attention to yield, quality, and food safety.

Key Responsibilities

Meat Fabrication & Portioning

Break down whole muscles (e.g., tenderloins, strip loins, shoulders) into steaks, cubes, or strips.

Hand-portion steaks and trimmings accurately to customer specifications.

Maintain strict yield control and minimize waste.

Identify and separate Halal vs. conventional products according to SOPs.

Work efficiently and cleanly under USDA-inspected conditions.

Communicate with leads regarding specs, yields, or production issues.

Food Safety & GMP Compliance

Follow all Good Manufacturing Practices (GMP), including:

Proper use of PPE (gloves, aprons, sleeves, etc.)

Preventing cross-contamination between tools, product, and surfaces

Adhering to handwashing and sanitation procedures

Maintaining temperature and cleanliness controls

Station Cleanliness & Maintenance

Keep workstation clean and organized throughout the shift.

Follow end-of-day cleaning and sanitizing procedures for knives, boards, scales, tables, and bins.

Report damaged tools or unsanitary conditions immediately.

Adhere to all USDA and internal sanitation standards.

Qualifications

2+ years of meat cutting or butchery experience (commercial or retail preferred)

Familiarity with USDA inspection, Halal standards, and HACCP is a plus

Ability to lift 60+ lbs and work in cold environments

Strong knife skills with proven speed, accuracy, and consistency
